Some of you may remember my leeeetle tendency to go on a food Jag. I have, proudly, been Jag-free for a few months.
But now, dear readers, I must confess. I've been riding a Jag lately, and it's a doozer. I've been snacking on this salty, spicy, sweet and sticky little bit of deliciousness for a week now. I cannot help myself. Like a Siren's song, this snack lures me in every afternoon, seducing me with its wiles.
Attempt this recipe at your own peril. It just might make you want nothing else...for quite some time.**
TKW's Crack Edamame
serves 3 (or 1 obsessed TKW)
1 16-oz bag frozen edamame in the shell*
1/4 cup soy sauce
2 teaspoons sesame oil
2 tablespoons seasoned rice vinegar
2 tablespoons honey
1/2 teaspoon Sriracha or crushed red pepper
1 tablespoon sesame seeds
1/4 cup water
Combine the soy sauce, sesame oil, rice vinegar, honey and Sriracha in a small bowl.
Bring 1/4 cup water to a boil in a large skillet. Add the edamame; bring up to simmer. Cook, uncovered, stirring often, until edamame is thawed and almost all water has evaporated, about 3 minutes. Add the sauce mixture; bring to boil. Turn heat down slightly and cook until mixture is thick and covers edamame like a glaze, about 8-10 minutes. Sprinkle with sesame seeds.
* You could use shelled edamame, but what's the fun in that? I love sucking the edamame out of the pod, licking my sticky fingers--it's good times!
** My husband wants to warn all dudes out there not to become addicted to this snack. Because hubs is WAY worried about those reports associating soy with man-boobs.

I hate to admit I've never actually tried edamame, and now that I'm back to the dreaded dieting I probably shouldn't. Not if it is that addictive.

ReplyDeleteFor realz (with a z)--I had issues with the husband sprinkling soy sauce on my edamame because it felt...redundant. But this application seems more than worth the effort--and the makings of my next crack snack!

ReplyDeletebtw, I'm not as worried about soy = man boobs as I am about soy = maldeveloped male fetuses. I'm really cutting back soy in case I'm cooking a boy. Just in case. I don't need to be responsible for his deformed junk *and* his deformed sense of self and the world.

ReplyDeleteWe eat entire bags of edamame over he-yah. Don't know how the kiddos would do with the hot sauce, but a little kosher salt and I am fending the entire family off. YUM.
ReplyDeleteThere's a way to prepare edamame other than just warm it up. Fascinating. I don't think I could get pass warming them up before I devoured them.
ReplyDeleteWe are addicted to edamame too. Everyone at our local asian market know me as the lady who buys like 10 pounds of edamame a couple times a month (and we don't have any kids yet, it is just hubby and I!). Seriously good snack food, and good for you! Why did I waste years eating chips or candies for snacks? :P

ReplyDeleteOkay, so I tried this two ways...once the way you have it written, but i doubled the vinegar (whore for vinegar; can't help myself) and it was too watery. But yummy. Tried again and skipped the steaming step, boiling them in the sauce instead. Much thicker glaze. So yummy. Like, shockingly, the crushed pepper instead of the Sriracha, which is weird given my love for the rooster. Thanks for the recipe. Baby's moobs and deformed junk thank you, too.
ReplyDeleteI read this post when you first wrote it, and didn't reply since I was such a newbie blogger then and didn't know about the importance of such things. I had never had edamame before, so didn't have much to say anyway! But this weekend I had it for the first time, and it was sooo yummy. And I remembered that you had a recipe for it. The funny thing was that all I could remember was "crack snack." Thank you Google, it brought me right back here!
ReplyDeleteThe problem? Finding edamame in this town. It could be a challenge. But the recipe is now bookmarked and ready to go. It looks soooo good, especially now that I know how yummy plain edamame with a bit of salt is!
